These delicious looking poached pears have been a part of my breakfast everyday for the last couple of weeks, on their own or with some brown rice pancakes. It’s pretty difficult when all types of sugars and desserts are out. These pears will satisfy any craving for that little sweet something after a meal or as a snack. Over the weekend, we have some friends over. I made these among some other treats. Everyone loved them! They are quite versatile too – topping for pancakes, with a scoop of your favorite ice cream, ashta, or even as I served it to friends last weekend, with Marsala Dark Chocolate Sauce. Did I mention they take no time at all to prepare? and they’re sugar-free?!
Spiced Vanilla Poached Pears
2 pears, sliced with peel (you can peel it if you prefer) I used Red Bartlett Pears
1 cup apple juice (100% juice)
1 1/2 cup water
1 tsp anise seeds
5 cardamom pods
3 cloves
2 cinnamon sticks or 1 long one
1 star anise
1 vanilla bean, split and scraped
Toasted Hazelnuts to finish
In a pot, pour liquids, all spices and vanilla beans and pod. Bring to a boil and reduce to simmer. Add sliced pears. Continue to simmer gently until pears are tender but not mushy. Remove pears with tongs and strain liquid. Bring back liquid to pot and simmer another few minutes until it slightly thickens. Serve warm with toasted hazelnuts.
